Why Rani Kasoori Methi - over 40 years, gently dried, sealed for aroma, from India

  • Dried fenugreek leaves are savoury and gently bitter with a warm, maple-like aroma. Crushed between the palms and stirred into a simmering pan, they open up in a few minutes and deepen the whole dish.

  • Add it to the pan while the gravy is still simmering so the leaves soften and release their aroma. Cooks often call it the missing ingredient in restaurant-style chicken tikka masala, butter chicken and dal.

  • Start with about a teaspoon, crushed between your palms, for a family-sized curry, then add more to taste. A little carries a long way, so one jar covers a lot of cooking.

  • Whole dried leaves, cleaned and packed loose rather than milled. Customers regularly mention the strong, fresh scent the moment the seal is opened and how clean and green the leaves look.

  • Beyond butter chicken and dal it belongs in paneer dishes, aloo methi, rajma, kadhi and curries generally, and it is lovely worked into naan or paratha dough and into marinades.

    In 1979, my parents opened their Los Angeles shop. I was three years old, and I grew up in the business.

What began as one small Los Angeles storefront is now hundreds of products - whole and ground spices, curry and masala blends, rice, lentils, flours, chutneys, sauces and sweets. We still taste and choose every one of them ourselves, because it goes on our table too. Vegan, gluten friendly, non-GMO and Indian origin.

    From my mother's samosas to dals, sabzi and chutney, the food of our family became the heart of Rani.

Product Description

Fenugreek is Native to the eastern Mediterranean and is cultivated widely in India, Pakistan, Morocco, France and Argentina. Fenugreek is a favorite spice in South India and Sri Lanka, where it is not limited to curries, but may also be found in chutneys, lentil dishes, pickles, and vegetables. The strong aromatic aroma of fenugreek is similar to that of celery and is a dominate ingredient in curry powders.
